A Tale of Bread

Recounted through photos by Gabriela Cuzepan

For a few years now, people have shown a growing interest in slowly made sourdough bread, like they used to in the past, as bread prepared this way is much healthier.
The project ‘Povestea pâinii’ (A Tale of Bread) is an attempt to document the story and the work process of a few bread-makers and producers in the city and the county of Sibiu, to show their sourdough bread-making approach and more. Through this research, we wanted to highlight the care that goes into making bread nowadays and how important it is to know what we eat, as well as who are the people behind this elaborate process.
Among them are producers from whom a lot of people in Sibiu buy bread, people who sell their products in Sibiu at Green Friday Fair in Huet Square on Fridays and at Transylvania Farmers’ Market on Saturdays. The project has also documented people who make bread to cover their own needs, to sell to others or to restaurants, as well teachers at “Terezianum” Technological Food Industry High School in Sibiu, who educate generations of pupils about healthy bread-making.
